La production mondiale de caviar (exclusivement d’élevage) est aujourd’hui de 364 Tonnes.
GLOBAL PRODUCTION: FARMED CAVIAR
Thirty years ago, the global production of wild caviar was 3000 tons per year, with 1500 tons coming from the Caspian Sea. Today, due to overfishing, the Caspian Sea no longer produces any caviar. Additionally, the import of wild caviar into Europe and the USA has been banned since 2010, when sturgeon became a protected species. As a result, global production is now almost exclusively farmed caviar.
